Valdeteja is an unpasteurised, whole, goats’ [[milk]] [[cheese]] produced in the areas of Arintero, Montuero, Noceda and Valdeteja (León) from late winter to early summer.<br />
<br />
The [[cheese]] is matured for at least a month and that if oiled, it may be stored for up to six months. The mouldy rind is rough and the interior is firm. It can be white to yellow, depending on its age and has a gentle but persistent flavour with a slightly spicy aroma.<br />
<br />
The cylinder-shaped [[cheese]] weighs around 1 kg and it is recommended as an appetiser.<br />
