Torrejón de Cantagrullas cheese

Torrejón de Cantagrullas is a soft, artisan, unpasteurised ewes' milk cheese from the Tierras de Medina in Castilla-León. It is produced in Ramiro in the south of the province of Valladolid.

The cheese has a characteristic black and white colour due to the ash which coats the natural, mouldy, white rind. After 1 week, it is ready for consumption, but can be matured for 3-4 weeks. When young, it has a smooth, closed and well-formed white interior and a slightly acidic flavour. As it matures, it becomes stronger and more complex.

It has a truncated pyramid shape, is 8cm high, a 10cm base and a weight of 250g. The fat in dry matter content is 45%.
