Toma di Mendatica cheese
Production area: Alta Valle Arroscia, with production in other valleys of Imperia (Alta Val Roja and Alta Valle Impero)
Features: Cows' milk cheese or mixed (cow and ewe), cylindrical or rectangular, diameter between 15cm and 45cm, 6-10cm high. The interior is white, but pale yellowish when more mature; soft texture, tiny holes or none. Slightly thick rind (2-3mm), smooth and supple texture, straw or reddish brown in colour according to maturation. Weight varying from 800g to 7kg. Sweet taste, more flavour when aged.
