Chef's version

Having made this delicious dish, I think that in future, I would make proper white sauce/cheese sauce with the sour cream and maybe a little extra milk as this would have prevented the cream splitting, which was disappointing.

I would also only use 1 large cooking apple.

When I made it this time, I added one whole onion, thinly sliced, a few grated carrots, some home smoked bacon and a big heap of sesame seeds to the breadcrumbs.
