Quantities

This was absolutely delicious, but I would be think the quantities given would easily serve 6 people. I made roughly half the quantities given in the recipe (see ingredient photos) and it served two (greedy) people with enough left over for another meal.

Nb: Call the cholesterol ambulance as you start to eat this!

Cheese

Époisses de Bourgogne worked really well with this dish.

TM Conversion

1 green chilli, topped 1 red chilli, topped 2 onions, cut in half (or quarters if large) 40 g butter 2 tomatoes, skinned and chopped 125 ml white wine 150 ml double cream 200 g of cheese, grated or cubed Salt and pepper to taste 1 kg potatoes, peeled and cut into pieces

Method Put the chillies and onions into the bowl 5 seconds / Speed 5 Add the butter 20 minutes / 120 C (Temp. Varoma for TM31) / Speed 2 / Reverse blade / MC Off Add the tomatoes and wine 10 minutes / Temp. Varoma / Speed 2 / Reverse blade / MC Off Add the cheese and the cream 3 minutes / 90C / Speed 1 / Reverse blade. Season to taste Tip the contents of the bowl into a container and place over the bowl in the Varoma basket Without washing the bowl, place the potatoes in the internal steaming basket Add 1 litre water to the bowl 20 minutes / Temp Varoma / Speed 1 Serve the potatoes and pour the sauce over them.
