My version

I have used rump steak, cut into 2.5 cm thick slices and hammered flat. I then placed each piece of beef on the (my home-cured and smoked) bacon and spiced as in the original recipe. Rolled the steak in the bacon and skewered with a cocktail stick. In the interest of my cardiologist, I have used olive oil instead of lard.

I fried the bacon rolls in very hot fat for no more than 2 minutes a side. Removed from the heat and let them cook in the cooling pan for another 5 minutes. I also let them rest for 10 minutes. They were well done and very tasty!

I served these with Potato dumplings and steamed broccoli.

Another variation

  • 5 cloves of garlic, crushed
  • 1 onion, chopped

Fry first, then proceed as recipe.

After 2 mins each side, add a glass of red wine and then reduce and rest.
