Polish version of Túró cheese

Túró is a form of quark which is a fresh cheese of Central European origin. It is soft, white and un-aged, and similar to fromage frais.

Quark is a member of the acid set cheese group, meaning it is traditionally made without the aid of rennet. However, to make the firmer Túró and other Eastern European versions, a small amount of rennet is added to make the curd firmer. Some or most of the whey is removed to standardise the túró to the desired thickness. Traditionally, this is done by hanging the cheese in loosely woven cotton gauze and letting the whey drip off, which makes the cheese drier and more solid than varieties common in most other countries.
