A nice quick one pot casserole recipe using shoulder of pork, always good for an economic dish.
Ingredients

- 1 kg boneless pork shoulder cut into 1 cm (1/2" cubes)
- 15g / ½ oz lard, ghee or olive oil
- A good pinch of freshly ground black pepper
- 1 large onion, peeled and chopped
- 3 cloves of garlic, peeled and crushed
- 1 tablespoon sweet paprika powder
- A good pinch of fried mixed herbs
- 1 bay leaf
- 1 large green pepper, de-seeded and cut into strips
- 1 can of chopped plum tomatoes
- 100g / 4 oz button mushrooms, sliced
- 2 teaspoon cornflour
