Sot la Trape cheese

Sot la trape is a cows' milk cheese produced in Carnia, Val Canale e Canal del Ferro in the Italian province of Udine. It is made in both 'latteria' and 'caciotta' style. It is immersed in tanks full of unfermented grape must from the locality and then matured for at least 60 days. The rind can be purple or bright yellow according to whether the must is from red grapes or white ones. The interior is compact with small or no holes and is straw coloured. It has a delicate, yet slightly spicy flavour and is cylinder shaped with straight sides and a flat or slightly convex face. Approximate dimensions: height of 8 cm, average diameter of 30-33 cm and weighing about 6 kg for the 'latteria' type; height of 10 cm, diameter of 10-15 cm and a weight of 1-3 kg for the 'caciotta'.
