Red snapper

Snapper are a huge family of perciform fish, mainly salt water but with some members living in estuaries, and entering fresh water to feed. Some are important food fish. One of the best known is the red snapper.

Snapper has a firm textured white flesh with a sweet, nutty flavour that is able to hold its own with robustly flavoured marinades. It is excellent for grilling and barbecuing.
