Serpa is a DOP cheese from Baixo Alentejo, about 200 km southeast of Lisbon and is the most famous traditional cheese in southern Portugal.

Produced from ewes’ milk, the cheese is curdled with vegetable rennet and wrapped in cloth to mature in cellars for 2 years. It is produced only from February to June. It has a natural rind which is regularly brushed with olive oil to which sweet paprika has been added

The cheese has a strong and spicy aroma and flavour and the interior is firm and creamy, with small holes.
