Scuete Frante cheese

Scuete Frante is made with very fresh ricotta Val d'Arzino, Val Tramontina and Carnia in the Italian region of Friuli-Venezia Giulia. It is matured in autumn for up to 2 to 3 months. It is creamy and off-white in colour, with a strong and spicy flavour if left to mature. Traditionally this was a method of preservation of ricotta probably used as an alternative to smoking.
