Sbrinz cheese
Sbrinz, which claims to be Europe’s oldest cheese, comes from central Switzerland and is often used instead of Parmesan in Swiss cuisine. Produced from full-fat cows’ milk, it is a very hard cheese.
The AOC cheese must mature for 16 months before it can be sold as Sbrinz, but the full flavour only develops after about 24-30 months, although it can be matured for as long as 8 years, If it is matured for less than 16 months, it is called Spalen.
