Literally meaning 'whore's sauce', this Roman sauce is made with anchovies, garlic, olives, capers and tomatoes.

Method

  1. Heat the butter and the oil in a saucepan and add all of the ingredients except for the tomatoes.
  2. Sauté gently for about 10 minutes.
  3. Add the tomatoes and simmer for a further 15 minutes.

Serving suggestions

Pour the sauce over a warmed bowl of cooked, long pasta such spaghetti and taglitelli.
