Saint Nicolas-de-la-Dalmerie cheese

Saint Nicolas-de-la-Dalmerie is a soft. goats' milk cheese from the Hérault department of Languedoc-Roussillon. It has a bloomy white rind, a dry texture and a mild strength. Coming straight from the fragrant region of La Dalmerie, it is unhurriedly produced in an abbey. There it obtains its bright flavours of thyme and rosemary, is gentle and fresh, and firm when put in the mouth where it melts on the palate in an effusion of aromas.
