Saint Jacques cheese
Saint Jacques is an artisan soft, cows' milk cheese produced by the Ferme de la TremblayeIle at Rambouillet in the Ile de France region of France. It has a white, bloomy rind and a mild flavour reminiscent of fungi. It is round in shape, with a diameter of 13 cm, is 3 cm. thick and weighs 350 g. The fat to dry matter content is 45%. It has a thin rind and the soft interior has a creamy, firm texture that varies from firm to almost liquid.
