Rock salmon

Rock salmon, rock eel, rock, bull huss, huss, spiny dogfish, dogfish, sea veal & flake are all names that refer to a number of small sharks found in the Western Atlantic or their flesh. It is a commonly sold in fish and chip shops in the UK. The firm pink-to-grey flesh keeps its texture when cooked and flakes easily, hence one of its names, flake. It is suited to all fish cooking methods.

Rock salmon can take mighty amounts of strongly flavoured spices, hot chillies and sauces so is therefore ideal for many Indian and Chinese-style dishes.
