Ricotta al fumo di ginepro o affumicata di Anversa cheese

Ricotta al fumo de ginepro comes from the National Park area of Abruzzo. It is produced from the whey of ewes' milk which has been left over from the production of Pecorino. The cheese is moulded in rush baskets and allowed to drain and when it has dried, it is dry-salted and left to mature for about a week. It is then moved to a room for 24 hours in which it is subjected smoking with juniper wood.

The cheese, which weighs 300-400g, has a solid, brownish-white body and a strong flavour
