Ricotta Iblea cheese

Ricotta Iblea is a fresh cheese produced in the Sicilian province of Ragusa. Derived from cows' milk whey, to which salt and cows' milk are added and then heated to about 90°C until the ricotta rises to the surface. The ricotta is placed in baskets which are placed on an inclined table containing cold water. The cheese is also salted. It is a cream cheese, ivory coloured, has a conical shape due to the basket in which it is drained. The flavour is sweet and has an aroma of whey.
