===Method===

| Sprinkle with [[Sea Salt|sea salt]] & [[Black pepper|black pepper]]. 
| [[Bake]] for 30- 40 minutes until the [[Tomatoes|tomatoes]] are [[Browned|browned]].
| Mix the [[Pesto|pesto]], 3 tablespoons [[Olive oil|olive oil]] & [[Bread|bread]] together in a bowl, ensuring the bread is evenly covered. 
| Spread the [[Croutons|croutons]] onto a [[Baking tray|baking tray]] & [[Bake|bake]] for 5 minutes in the [[Oven|oven]] with the [[Tomatoes|tomatoes]]. 
| Turn the [[Croutons|croutons]] & [[Bake|bake]] for a further 5 minutes. Put to one side.
| Put the rest of the [[Olive oil|olive oil]] in a pan & gently [[Fry|fry]] the [[Onions|onions]] for 10- 15 minutes, add the [[Vinegar|vinegar]] & [[Sugar|sugar]]. 
| Cook for a further minute.
| Liquidise the [[Roast|roast]] [[Tomato|tomato]] mixture. 
| Add the [[Fried|fried]] [[Onion|onion]] & [[Stock|stock]]. 
| Reheat the [[Soup|soup]] & check the seasoning.
