Queso de Pría cheese


Queso de Pría is a cows’ milk cheese with added cream from ewes, which is produced in the village of Pría.

The milk and cream are heated and natural rennet is added. After half an hour the curd is cut and put into moulds. It is pressed for 24 hours and put in brine. After this process it is left to mature for about two months and is then smoked with oak and beech woods.

The cheese is cylindrical in shape, the interior is ivory in colour and the rind is brown and hard. It is also available unsmoked.
