Queso Rozagás cheese
Queso Rozagás is an unpasteurised mixed milk cheese from cows, goats and ewes from the village of the same name in the Sierra de Cuera in the ‘concejo’ of Peñamellera Alta.
The milk is heated to 25/30 º and the rennet is added. The curds are put into moulds and allowed to mature for two months. It is a hard cheese, cylindrical in shape and can weigh between 3 and 5 kg. The interior is white to blue and the rind is pale and slippery.
