Quesaíllas cheese
Quesaíllas is a firm goats’ milk cheese from the province of Badajoz in Extremadura. It has a strong, intense, slightly spicy flavour and is buttery on the palate. The aroma is intense and putrid
The rind is rough, sticky and an orange-brown colour and the compact interior is white, but cheeses which are matured in olive oil are white with brownish edges. The maturation period is anything from 1-8 months.
The cheese is shaped like a small, regular cylinder which is somewhat distorted and it weighs between 100 grams and 500g.
