Purple sprouting broccoli is an excellent source of vitamins and minerals and tastes fantastic. With lots of garlic and sesame seeds it has a really nutty taste.

This recipe is best with lots of garlic, but is just as good with a few cloves of garlic if you're scared of it!

Mise en place

  • Trim and discard any woody stems and large leaves.
  • Heat a large saucepan with lots of salted water and bring to the boil
  • Add the broccoli and simmer for 2 or 3 minutes

Method

  1. Heat a large frying pan or wok over a medium heat
  2. Add the sesame seeds and stir or toss them until they take a little colour, then tip them out onto a plate before they start to pop and make a mess of your kitchen!
  3. Heat a large saucepan with lots of salted water and bring to the boil
  4. Add the broccoli and simmer for 2 or 3 minutes
  5. Add the sesame oil and olive oil to the same frying pan or wok and add a pinch of black pepper and stir in the crushed garlic.
  6. Heat for just 1 minute then stir in the broccoli and fry for 3 minutes, turning often and ensuring the crushed garlic does not burn.
