Poiset au Marc cheese

Poiset au Marc is a modern cheese from Burgundy which was created by an agricultural engineer called Pierre Moine. He was wanted to create a cheese exactly like Époisses de Bourgogne, but made with goatsmilk instead of cows’ milk.

The cheese is not pressed or cooked. It has a brown-orange, wrinkled rind which is washed with Marc de Bourgogne. It has a refined taste and a delicate texture. Matured for 6-8 weeks, the cheese comes in rounds of 180g.
