The Dosa is a South Indian crêpe made from rice and black lentils. Dosa is a typical South Indian food, eaten for breakfast or dinner, and is rich in carbohydrates and protein.

Method

  1. Wash the dal, cooked and raw rice in cold running water.
  2. Add plenty of water and the fenugreek seeds
  3. Leave to soak overnight
  4. In the morning, wash rinse a few times and drain well
  5. Grind the rice and dal with just enough water to make a smooth paste
  6. Add the bicarbonate of soda, salt and yogurt and mix well
  7. Leave in a warm place for 12 hours
  8. Give the batter a final mix and adjust the consistency by adding a little water if necessary
  9. The batter should coat a dipped spoon well
  10. Heat a frying pan, tava or griddle and add a teaspoons of ghee when hot
  11. Pour a spoonful of batter in the centre, spread with the back of the spoon to a thin round
  12. Remove when crisp
