Pecorino sott'olio cheese

Pecorino sott'olio is a ewes' milk cheese from Abruzzo, Italy where it is produced from mid-November to late June in the area of Atri in the province of Teramo and Penne in the province of Pescara. The cheese is matured for 8 months in a dark place, during which time it is cut into pieces and put into sunflower or soya oil. The pieces can be cut small or into 1 larger piece weighing 400g.
