Pecorino di Moliterno cheese
Pecorino di Moliterno is an uncooked, pressed cheese made with ewes' milk (two thirds) and goats' milk (one third) from the mountain community of Val d'Agri in Basilicata. It has a cylindrical shape with flat sides and weighs between 1-8kg. The ridged rind is pink and yellow and the interior is a pale grey colour. Of medium strength, the flavour is quite sharp. It is matured for 8 months during which time it is periodically turned over and rubbed with oil and vinegar.
