Pecorino della costa Apuana cheese

Pecorino della Costa Apuana is a ewes' milk cheese from Costa Apuana on the shore of the province of Massa-Carrara and Upper Versilia in Tuscany. Production takes place throughout the year. After milking, which is done every day, night and morning, the milk is collected in a copper vessel, heated to 30 to 35°C and curdled by adding rennet (dried lambs' stomach) or, rarely, commercial. After being broken with a wooden stick, the curd is heated to 40 to 45°C and then placed in wooden moulds. Then the cheese is salted, laid out on wooden boards to drain and dry and turned regularly. It is round in shape weighing from 1 to 2.5kg. Its colour is yellowish white, has a light and salty taste and intense aroma.
