Palet de Bourgogne was created by Raymond Gaugry, a famous Burgundian [[Cheese|cheese]] maker. It is an artisan [[Cows|cows]]’ [[Milk|milk]] [[cheese]] which is matured for at least 1 month.<br />

It has a strong and persistent aroma (although not as strong as [[Époisses de Bourgogne cheese|Époisses]]) and a rind which is brine washed every 2 days. It has a soft, velvety interior and a pleated orange rind.<br />
