Paglierina cheese
Pagliera (aka Ciabot) is an unpasteurised cows' milk cheese from Monesiglio in the province of Cuneo and some areas of the provinces of Torino and Asti. However sometimes small quantities of ewes' milk are also added. It takes its name from the fact the it is matured on straw which produces patterns on the edible rind and gives it its special flavour.
It is a soft cheese, with a buttery, compact texture, which melts in the mouth. In the fresh product, there is no rind but it develops as it matures, becoming a pale yellow colour. It has a very pronounced aroma, especially if ewes' milk has been added and a mild flavour. It is matured for 7-10 days.
