Looking around Flickr for a photograph, I found this recipe by Robin, (http://www.flickr.com/photos/fotoosvanrobin/sets/). The recipe and the photograph looked so good, I just had to add it. Robin has a very interesting Cookery blog, take a look.

Method

  1. Slowly sauté or stir-fry the carrots in the butter for about 4 minutes.
  2. Add the sugar, madeira and orange juice, turn up the heat and allow the liquid to vapourise. Toss the carrots regularly to prevent them from sticking

Serving suggestions

Serve with chopped flat-leaf parsley.

Variations

I've not tried this recipe yet, though I would think a teaspoon of fennel seeds would be a nice addition.
