Ingredients

- ½ lb gram flour (Chana flour - made from ground lentils)
- 2 medium onions, sliced finely (top to bottom) or chopped in a food processor
- ½" fresh ginger, grated
- 3 tablespoons of freshly chopped coriander leaves
- 1 fresh green chili, de-seeded and chopped
- 1 large potato, sliced finely with a mandolin or a food processor
- ½ teaspoon of freshly ground cumin powder
- ½ teaspoon turmeric powder
- ¼ teaspoon chili powder
- ½ teaspoon of baking powder
- ¼ teaspoon of salt
- Juice from ½ a lemon
- ½ cup of water
- Oil to deep-fry
Method
- Mix all of the ingredients above with ½ of the water, carefully adding more water as the onions and potatoes will add more moisture to the batter. It should be thick so can be shaped by a tablespoon and hold it's shape
- rest the mixture for 1 hour if possible
- Heat the oil as you would for deep-frying chips
- Shape with a tablespoon and deep fry for a few minutes until golden.
- Drain on kitchen paper and serve
Serving Suggestions
Serve hot with mint and onion raita
