Neufchâtel cheese

Neufchâtel is a soft, slightly crumbly, mould-ripened AOC and AOP cheese made in the region of Upper Normandy and Picardy. One of the oldest cheeses in France, its production is believed to date back to the 6th century.

The cheese looks somewhat similar to Camembert, with a dry, white, edible rind, but the taste is saltier and sharper. It has the aroma and flavour of mushrooms and is slightly tangy and acidic. Unlike other soft-white-rinded cheeses, it has a grainy texture.

Available in six different shapes and sizes the cheese is typically sold in the shape of a heart. It is matured for 8–10 weeks.
