Munster is an [[AOC]] and [[AOP]] semi-hard [[cheese]] produced from unpasteurised cows’ [[milk]].

The [[cheese]] has a shiny brick-coloured or orange rind, with apparent moisture on it and a very strong, penetrating aroma and taste.  The rind is [[brine]] washed during its maturation period in damp cellars.

Marketed as either Little Munster Gérômé (300 g approx), or Big Munster Gérômé (1.5 kg approx) the round [[cheese]].is matured for 5 weeks for the small version and 2-3 months for the large.
