Munajuusto is a soft, artisan cheese which is produced in a rather eccentric manner by adding one or two eggs to the milk, which is then heated until set. After the whey is drained, the curd is pressed lightly in hand-woven baskets. The result is fresh and moist, bright yellow and sometimes the outside is speckled with brown pigments.
Like Juustoleipä the cheese can be toasted in front of a fire or grill before it matures. The same cheese produced in factories is called Ilves.

I miss my favourite: Coffee cheese or Kaffeost. That's an oven baked fresh cheese of reindeer milk, from Swedish and Finnish Laponia. Brought as a small food out in the woods. When firm and cold it's put in a cup of coffee and it becomes soft and squirky!.
