Mrs Kirkham's Lancashire cheese

Mrs Kirkham's Lancashire is an artisan, unpasteurised cows' milk cheese produced by Ruth Kirkham and her family at Beesley Farm in Goosnargh near Preston.

The cheese is produced from six separate milkings of their own herd of Friesian Holstein cows, using a natural culture, natural rennet and salt. It is matured for anything from 6 weeks to 12 months, depending on the variety. The younger versions are mild, creamy and slightly crumbly, whilst the more mature ones have a fuller and rounder flavour.

The cheese, which was Supreme Champion at the International Cheese Show, Earl's Court, in London, comes in the following varieties:
