Merluza(Hake)

Merluza Spanish for Hake, can be a number of cod-fishes from the Merlucciidae family, commonly, European hake, (Merluccius merluccius), Haddock, offshore hake, (Merluccius albidus), Hoki (Macruronus novaezelandiae).

Its flakey flesh has a mild, subtle flavour and few bones. It is commonly sold whole, as steaks or fillets. It can be fried, poached or used in soups. It freezes well.

Hake is very popular in Spain, Argentina and Uruguay, where it is known as Merluza.
