Menallack cheese
Menallack was the first cheese to be made at Menallack Farm, Penryn near Falmouth and is an unpasteurised, vegetarian, hard, full-fat cheese produced from cows’ milk.
The cheese is based on a recipe for a type of Cheshire cheese, but is different in that Cornish cows graze on granite, which ultimately makes a difference to the soil and the grass and therefore the milk. Using only single herd milk from local suppliers the cheese is matured for 2 months.
Manallack is mould ripened and has a creamy texture with fresh taste and a hidden bite to its full flavour. As well as the ‘big’ cheese, a 500 g Baby Menallack is sometimes available.
There are also two other varieties:
Menallack with Chives and Garlic - a fresh young cheese with an oniony tang
Menallack Vintage – a gutsy and tasty cheese which is matured for a minimum of 3 months
