This version is a no-cook marzipan made with eggs. It's quick, simple and easy to make. More than can be said for icing a cake!

Method

  1. Whisk all of the eggs, the almond extract or almond essence and the lemon juice and brandy
  2. Mix in the ground almonds and both sugars
  3. Use your hands and knead well to form to a pliable 'dough'
  4. Cover in greaseproof paper and refrigerate until required
