Manteca del Cilento cheese

Manteca del Cilento is made with lambs' rennet and is produced in the Italian provinces of Avellino and Salerno in Campania. It is produced using a central core of ricotta which is then coated in stretched curd - both processes arising from the manufacture of Caciocavallo podolico. The flavour is sweet and has an oily rind and a soft interior.
