A fresh and simple salsa that would be good with fish, chicken, ham and also most Asian-style dishes

Method

  1. Add the lime juice, lime zest and nam pla and chillies to a bowl and whisk in the sugar
  2. Peel the mango and remove the flesh by slicing around the stone - mangoes are much easier to peel when very ripe.
  3. Dice the slices finely
  4. Add the mango cubes and toss in the mixture
  5. Sprinkle the coriander leaves over the top
  6. Add a dash of freshly ground black pepper and serve
