Use 5 to 6 mandarins per person
- 5 mandarins or Citrus fruit, see above
- 2 mint leaves per glass, stem & centre vein removed and finely chopped
- Using a juicer, extract the juice
- Pass the resulting juice through a coarse sieve to remove pips and pith etc.
Serve chilled, sprinkled with chopped mint leaves
