One of Delia's cheats that turns a good soup into a brilliant one. Lobster bisque is an excellent cheat for using as a strong seafood stock; adding coconut milk to it is genius


Ingredients

Method

  1. Heat the soup, coconut milk and the ginger in a large pan
  2. Stir well and simmer for 10 minutes
  3. Just before serving, stir in the lime and the fish sauce
  4. Garnish with coriander and serve

Serving suggestions

Serve with crusty bread

Variations

Add a handful of prawns at the last minute to make this a really special meal.
