Lightwood Chaser cheese

Based on the French cheese Chaource, Lightwood Chaser is a soft cheese with an elegant white rind. It is made with unpasteurised cows' milk and vegetarian rennet. Extra cream gives a smooth, light texture and a fresh dairy taste with a hint of Stilton cheese. Keep it a little longer to soften and develop a fuller, more powerful flavour.

It is produced by Lightwood of Lower Broadheath in Worcestershire and can be obtained directly from them. The cheese is not available in supermarkets, but they provide a list of retail suppliers.
