La Tercia-Villamanín cheese
The region of La Tercia lies to the north of the province of León, bordering the Community of Asturias. This is a region rich in tradition and cheese dairy cattle, veal and goat.
The cheeses is soft to semi-hard and made from goats’ milk and animal rennet. It has a unique aroma, a strong flavour and is matured for at least three months. Cylindrical in shape, it has a thin, yellow, hard rind with a compact, white interior.
The size of the cheese ranges from 10 to 15 cm in diameter, 8 to 10 cm in height, has a weight of 600g to 1kg. It is also sold cut sealed in jars of oil.
