Gratte-Paille cheese
Gratte-Paille is an industrial, soft, cows' milk cheese from the Seine-et-Marne département of the French region of Ile de France. It was created in the early 1970s and takes its name from 'gratte' (scratch) and 'paille' (straw), highlighting the fact that once, in summer, when carrying straw bales around the narrow streets, pieces of straw were inlaid in the walls.
The cheese is very mild, smooth and extremely creamy, with a pleasant flavour of mushrooms, increasing in intensity as it matures. It has a natural, bloomy white rind and is matured for 3-4 weeks. It has a high fat content fo 70% fat to dry matter. Sometimes, these cheeses are sold on small straw mats.
