Gour noir cheese

Gour noir is a mild, soft, goats' milk cheese from the Corrèze département of the Limousin region of France, where it was first developed by a farmer in the village of Lapleau de Corrèze. It was given the name 'Gour noir' because of the existence of a black rock-mountain in the region.

The cheese, which is coated in natural ash, has a smooth, fine texture and is white in colour. The flavour has subtle hints of goat and hazelnuts and is herby. Matured for 2-6 weeks, it is discoidal in shape and weighs about 280g.
