===Method===

| In a large saucepan, melt the [[Butter|butter]] and [[Brown|brown]] the [[Chicken|chicken]] pieces 
| Add the [[Sugar|sugar]] and [[Onions|onions]], allow to [[Stew|stew]] for 15 minutes and drain off the [[Fat|fat]].
| Reduce the heat and add the [[Red wine|red wine]] and half of the [[Wine vinegar|wine vinegar]].
| Cook for a further 15 minutes, partially covered. 
| Add the [[Tomato|tomato]] purée and the pink [[Peppercorns|peppercorns]] and continue cooking for 10 minutes more.
| Strain the [[Sauce|sauce]] (reserve it) and season the [[Chicken|chicken]].
| Melt the tablespoon of [[Butter|butter]] over a medium heat in a fresh pan, add the [[Chicken|chicken]] and the [[Garlic|garlic]]. Meanwhile, put the [[Potatoes|potatoes]] on to [[Boil|boil]].
| Turn the [[Chicken|chicken]] once or twice during cooking. Add the remaining [[Vinegar|vinegar]], cover and continue cooking on a very low heat for a further 10 minutes.
| When cooked place the [[Chicken|chicken]] in a serving dish and reheat the reserved [[Sauce|sauce]] in the pan in which you added the [[Vinegar|vinegar]] to the chicken.
| Arrange the [[Potatoes|potatoes]] around the [[Chicken|chicken]] pieces and pour the [[Sauce|sauce]] over them. 
| Garnish with the [[Parsley|parsley]].
