Milk: Whole milk or partly skimmed milk, from Piedmont breed of cow, unpasteurised

Feeding: Fresh fodder from the pastures of Monte Saccarello.

Height: 4-5cm

Diameter: 20-40cm

Weight: 7-8kg

Rind: Reddish brown in matured cheeses

Interior: Slight holes, yellow gold colour

Production area: Triora (Imperia) in Liguria

Maturation: Up to 1 year in fairly moist and cool conditions
